
Grilled Chicken breasts with Cajun spices are loaded with avocado, bacon, cheese, and spinach. Served on a bread roll called ciabatta... is set to be a favorite for Friday nights.
Ingredients
- Four chicken breasts (skinless)
- Two tablespoons of olive oil
- Four smoked bacon rashers
- Two avocados
- Four ciabatta rolls, split.
- Four fine slices of your favorite cheese.
- Four small handfuls of baby spinach leaves
- mayonnaise, served (optional)
To make a Cajun seasoning
- One tablespoon of cumin powder
- One tablespoon of ground coriander
- One tablespoon paprika
Method
STEP 1
Mix the seasoning ingredients with a fine grind of black pepper and a sprinkle of salt. Set aside in a dish of a large size. Preheat the grill to high. Flatten the chicken a bit before pouring half the oil over a plate. Then toss with the spice mixture until coated. In the meantime, heat the remaining oil in a large fry pan, and cook the meat for five minutes on each side until the chicken is cooked through, pushing it to the opposite edge of the skillet and cooking the bacon for a couple of minutes until it's cooked through.
STEP 2
While the chicken cooks, cut it in half, peel and cut the avocados, and toast the sides you cut off on the buns. Top these buns with cheese, then grill until it melts.
STEP 3
To make the burgers, put the buns on top with mayonnaise if desired, and top them with a handful or two of spinach and then a piece of bacon. To keep the avocado from slipping out, Slice the chicken and then add a slice of chicken and avocado. Then, place the bun on top, lightly press it down, and serve.
